Easy Dhokla Recipe

Ingredients for Making Dhokla

• 1 cup Besan (basic gram flour)
• 1/2 cup Yogurt
• 1/2 cup Water
• 1 teaspoon Ginger-green chili paste
• 1/2 teaspoon Turmeric powder
• 1 tablespoon Lemon juice
• 1 teaspoon Eno (or 1/2 teaspoon Baking soda)
• Salt to taste
• 1 tablespoon Oil

For Tempering (Tadka)

• 1 tablespoon Oil
• 1 teaspoon Mustard seeds
• 8-10 Curry leaves
• 2-3 Green chilies (slit lengthwise)
• 1 tablespoon Sugar
• 1/2 cup Water
• 1 tablespoon Lemon juice
• 2 tablespoons Coriander leaves (for garnishing)
• 1 tablespoon Grated coconut (optional)

Method for Making Dhokla

1. Prepare the batter: In a bowl, mix besan, yogurt, and water to make a smooth batter. Add ginger-green chili paste, turmeric, and salt. Mix well and let it rest for 10-15 minutes.

2. Prepare for steaming: Boil water in a large pot and place a steel sieve or Dhokla steamer on top. Grease a plate or mold with oil for making Dhokla.

3. Add Eno and steam: Now add lemon juice and Eno to the batter, then gently mix. Immediately pour it into the greased plate and cook in the preheated steamer for 15-20 minutes.

4. Check the Dhokla: Check with a toothpick; if it comes out clean, the Dhokla is cooked. Remove and let it cool.

5. Add tempering: Heat oil in a small pan, add mustard seeds. When they splutter, add curry leaves and green chilies. Now add water, sugar, and lemon juice and heat gently. Pour this over the Dhokla.

6. Garnish and serve: Garnish the prepared Dhokla with coriander and coconut and serve hot.
