Crispy and delicious Balushahi at home, recipe
Balu shahi is a traditional North Indian sweet, sometimes called khurmi. It's very delicious and many enjoy its crispy texture. This easy recipe will help you make delicious balushahi at home. You'll need flour, ghee, sugar, and green cardamom.
Necessary Ingredients
Flour - 500 grams (4 cups)
Ghee - 150 grams (3/4 cup) for mixing into the flour
Baking soda - 1/2 teaspoon
Yogurt - 1/2 cup
Sugar - 600 grams (3 cups)
Green cardamom - 4-5
Ghee - for frying
How to make Balushahi
In the flour, add baking soda, yogurt, and ghee. Mix well, and gradually add lukewarm water to knead a soft dough. Do not overmix the dough; just bring it together. Let the dough rest for 20 minutes. After resting, gently knead again. Pinch off small, lemon-sized portions from the dough. Roll each portion into a ball between your palms. Press down on each ball in the center like a small bun, creating a dimple on both sides using your thumbs. Shape all the dough portions into similar balushahi.
Heat ghee in a pan. Once hot, carefully add the shaped balushahi to the hot ghee. Fry on medium-low heat until golden brown on both sides. Remove the fried balushahi from the pan and place them on a plate or a tray. Fry all the balushahi. Prepare a sugar syrup by dissolving 600 grams of sugar in 300 grams of water. Bring the sugar syrup to a simmer until it forms a thick thread-like consistency. Turn off the heat and carefully add the balushahi to the hot syrup. Soak for 5-6 minutes. Using tongs, carefully remove the balushahi from the syrup and place them on a plate, garnish with chopped pistachios, and serve.
