How to Make Spicy Dahi Vadas? A Detailed Recipe
Dahi vada, a popular dish enjoyed throughout India and beyond, is a beloved culinary delight. While yogurt recipes often focus on raita, dahi vada holds a special place in the hearts of many, particularly during festivals and celebrations. Necessary Ingredients
Urad dal (soaked and cleaned) - 250 grams
Yogurt - 1 kilogram
Black salt (powdered) - 1 teaspoon
Regular salt - to taste
Cumin seeds - 2 teaspoons
Red chili powder - 1 small teaspoon
Chaat masala (powder) - 1 teaspoon
Tamarind pulp - for garnish and sweetness
Green chutney - for garnish and tanginess
Refined oil - for frying
How to Make Dahi Vadas
Soak the urad dal overnight. Drain the dal and grind it into a smooth batter without adding any water.
Transfer the ground dal to a bowl and thoroughly mash it using a spoon or beater until it becomes well-mixed.
Fill a glass with water. Add a small portion of the batter to the water. If the batter floats, it's ready for making the vadas. Otherwise, continue mashing until it floats.
Heat oil in a pan. Carefully drop spoonfuls of the batter into the hot oil.
Fry the vadas on medium heat, stirring occasionally, until they turn golden brown.
In a large bowl, mix warm water with salt to taste. Submerge the fried vadas in this salty water.
This step ensures the salt penetrates the vadas thoroughly and removes excess oil.
In a separate pan, lightly sauté cumin seeds, warm spices, and red chili powder. Add chaat masala and mix well. This masala will be sprinkled on top of the dahi vadas.
Strain the yogurt to remove any excess liquid, making it smooth and creamy.
Remove the vadas from the salty water and drain any excess liquid. Place them in the yogurt.
Sprinkle the prepared masala mixture over the vadas in the yogurt. Garnish with green and red chutneys. Serve immediately.
