Carrot Halwa Recipe
Carrot halwa is a delightful dessert, especially enjoyed during the winter season. It's incredibly easy to make, and this recipe uses homemade khoya (a milk-based solid).
Ingredients for Carrot Halwa
1 kg carrots
250 grams sugar
250 grams khoya
1 tablespoon ghee (clarified butter)
10-12 raisins
12-15 chopped cashews and almonds
1 ½ cups milk
5-6 cardamom pods
Instructions for Carrot Halwa
For this recipe, use large, bright orange carrots.
Peel, wash, and grate the carrots thoroughly.
Place the khoya in a pan and cook over low heat until it's lightly browned.
Add the grated carrots and milk to the pan and bring to a boil.
Simmer the carrots until they soften and then stir in the sugar.
Continue stirring the mixture until the carrots release their moisture, and the excess liquid reduces.
Add the ghee and cook until fragrant. Stir in the raisins, cashews, and almonds.
Incorporate the cooked khoya and stir for 2-3 minutes more.
Remove from heat and add the ground cardamom.
