An Easy Method to Prepare Delicious Rasmalai

Rasmalai is a beloved Indian sweet treat, as delightful as its name suggests. Necessary ingredients

1 liter milk

2 teaspoons white vinegar

1/2 teaspoon cornstarch

1.2 kilograms sugar

2 tablespoons milk (for rabdi)

6 tablespoons sugar

To make Rasmalai, first prepare chenna (Indian cheese). Combine 1 liter of milk with 2 teaspoons of white vinegar. Tie this mixture in a muslin cloth and squeeze out all the water. After about half an hour, place the chenna on a plate. Ensure the chenna is slightly moist. Now, knead the chenna with your hands until it forms a dough-like consistency. Roll the dough into small balls. In a pressure cooker or similar pot, add half a cup of sugar and gently heat it on low flame. Once heated, place the balls in the sugar syrup, and simmer. After simmering, transfer to a bowl and let cool completely for 1-2 hours.

How to make Rabdi for Rasmalai

In a large pan, heat 1 liter of milk over medium heat until it reduces to half its volume. Add 3 tablespoons of sugar, cornstarch, and cardamom powder. Add pistachios or other dry fruits, and then add the prepared Rasmalai balls. Stir in some saffron strands. Allow the mixture to cool completely, preferably in the refrigerator for 2-3 hours.
