Gourd Pudding: The Best Way to Make It

Gourd pudding, also known as दूधी का हलवा, is a simple dessert made by cooking grated gourd with milk, khoa (mawa), and dried fruits. It's perfect for parties or any time you crave a delicious sweet treat.

Ingredients Required

Gourd - 1 piece

Sugar - 1 cup (100 grams)

Khoa/Mawa - 1/2 cup (50 grams)

Milk - 1 large cup

Cardamom powder - 1 teaspoon

Ghee - 2 tablespoons

Dry fruits - 2 tablespoons

Recipe

To make gourd pudding, first peel and grate the gourd. Set it aside. Heat 2 tablespoons of ghee in a pan over medium heat. Once the ghee is melted, add the grated gourd and sauté until it turns slightly brown. Pour in one large cup of milk and cook until the milk has almost completely reduced. Add sugar and mawa/khoa, mixing well with the gourd. Continue cooking, stirring constantly, for about 10 minutes, until the mawa is well cooked. Incorporate cardamom powder and chopped dry fruits (cashews, almonds, pistachios) and turn off the heat. Your delicious gourd pudding is ready!

Tips

Stir the pudding continuously to prevent it from sticking to the bottom and burning.

Refrigerate the pudding once it has completely cooled. It can be stored for up to a week.

Always taste the gourd before making the pudding, as sometimes it can be bitter, which would make the pudding bitter as well.
