Easy recipe to make Spicy Punjabi Chole Bhature

Punjabi Chole Bhature is a delicious and irresistible dish. Whether children or adults, the mere mention of chole bhature makes everyone's mouth water. Everyone loves to eat chole bhature. Those who enjoy it savor every bite, practically licking their fingers. It is a very popular Punjabi dish.

Ingredients of Chickpeas (Chole)

2 cups chickpeas

Tea leaves

Dried Indian gooseberry (amla)

1 bay leaf

1 cinnamon stick

2 cardamom pods

1 teaspoon cumin seeds

1 large cardamom pod

8 black peppercorns

3 cloves

2 onions, chopped

1 teaspoon garlic

1 teaspoon ginger

1 teaspoon turmeric powder

1 teaspoon red chili powder

1 teaspoon coriander powder

1 teaspoon cumin powder

Salt to taste

1 cup water

1 tomato, chopped

A bunch of fresh cilantro (coriander)

Ingredients for Bhatura

2 cups whole wheat flour (atta)

2 tablespoons semolina (rava/sooji), fine

1 teaspoon sugar

¼ teaspoon baking soda

1 teaspoon sugar

½ teaspoon salt

2 tablespoons oil

¼ cup yogurt

Water, for kneading

Oil, for frying

How to make Chickpeas (Chole)

First, take a pot. Add chickpeas, tea leaves, and dried amla, and bring to a boil. Now, heat oil in a pan. Once hot, add bay leaf, cinnamon stick, cumin seeds, black peppercorns, and cloves. Add the chopped onions and sauté until golden brown. Now add garlic, ginger, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well. Add water, the boiled chickpeas, and chopped tomato. Mix thoroughly, and transfer to a pressure cooker. Add fresh cilantro. Cook in a pressure cooker.

How to make Bhatura

First, in a large bowl, combine 2 cups whole wheat flour, 2 tablespoons semolina, 1 teaspoon sugar, ¼ teaspoon baking soda, ½ teaspoon salt, and 2 tablespoons oil. Mix well.

Now, add ¼ cup yogurt, and mix thoroughly.

Next, add water as needed and knead the dough.

Knead a soft dough without pressure.

Grease with oil, cover, and let it rest for 2 hours.

After 2 hours, knead the dough again slightly.

Shape the dough into a ball, ensuring no cracks.

Roll into a slightly thick loaf, greasing with oil to prevent sticking.

Place the rolled dough into hot oil.

Press down and pour oil over the bhaturas until they puff up.

Turn over and fry until golden brown.

Finally, remove the bhaturas from the oil and serve hot with the chole. Serve with chopped onions, green chilies, lemon wedges, and pickles on the side.

Serve the hot bhaturas with the warm chole. For a complete experience, include chopped onions, green chilies, lemon wedges, and pickles on the plate.
