Easy Bengali Chenna Rasgulla Recipe
The name Bengali Rasgulla (Chenna Rasgulla) instantly brings a sweet taste to the mouth. While making it might seem a little challenging, a bit of effort and practice will make it easy. A beloved Indian sweet, rasgulla is a soft and delightful dessert. A traditional Bengali sweet ball, it's made from fresh paneer and dipped in sugar syrup. Let's learn how to make chenna rasgulla today.
Necessary Ingredients
Milk - 1.5 liters (7 cups)
Lemon juice or vinegar - 2 tablespoons (juice of 2 lemons)
Arrowroot powder - 2 teaspoons
Sugar - 800 grams (4 cups)
Rasgulla Recipe
Pour milk into a pan and cook over medium heat until it comes to a boil. Once boiling, turn off the heat and let it cool slightly. Once the milk has cooled a bit, add lemon juice and stir continuously. You'll notice the milk curdling. When the curdling is complete, drain the mixture onto a cheesecloth and squeeze out the whey and chenna.
Wash the chenna in clean water to remove any remaining lemon tartness or smell. Squeeze the cheesecloth again to remove all the water from the chenna. Now, add the chenna to a bowl and add arrowroot powder. Mix with your hands until it forms a smooth and soft dough-like consistency. (This process may take 5-7 minutes). The chenna should be soft enough to form balls, otherwise, they might break when added to the syrup.
Once the chenna mixture is soft, take a lemon-sized ball and shape it into a round ball in your palm. Ensure all the balls are small in size, as they will expand in the syrup. Now, prepare the syrup by adding 2 glasses of water and sugar to a pan and cook over medium heat until the sugar dissolves completely.
Once the sugar is completely dissolved and starts to boil, add cardamom powder and cook until the syrup thickens. Add the balls to the thickened syrup and cook covered for 5 minutes over medium heat. Stir the balls occasionally with a spoon so they absorb the syrup evenly. Turn off the heat and transfer the rasgullas to a bowl. Add saffron threads, and refrigerate for half an hour.
