  • Mustard oil – 4 tablespoons

  • Cloves – 2
  • Black peppercorns – 2-3
  • Bay leaf – 1
  • Dried red chili – 1
  • Cumin seeds – 1 teaspoon
  • Onion (sliced) – 1 cup
  • Chopped ginger – 1 tablespoon
  • Chopped garlic – 1 tablespoon
  • Tomato pulp – 1/2 cup
  • Salt – to taste

For Making the Masala Paste:

  • Yogurt – 1/4 cup
  • Turmeric powder – 1/4 teaspoon
  • Red chili powder – 2 teaspoons
  • Cumin powder – 1 teaspoon
  • Coriander powder – 1 teaspoon
  • Garam masala – 1/2 teaspoon

For Garnish:

  • Fresh coriander (chopped) – 2 tablespoons

Method to Make Jackfruit Vegetable

1. Roasting the Jackfruit

First, heat 2 tablespoons of mustard oil in a pressure cooker. Add the jackfruit pieces and roast on medium heat for 2-3 minutes until golden brown. Roasting the jackfruit pieces gives them a special aroma and also improves their texture. Remove the roasted jackfruit to a plate and set aside.

2. Preparing the Masala

Now heat the remaining 2 tablespoons of oil in the cooker. When the oil is hot, add cinnamon, cloves, black peppercorns, bay leaf, dried red chili, and cumin seeds and sauté for a few seconds so that the aroma of the spices is fully released.

3. Sautéing Onion, Ginger and Garlic

5. Add Jackfruit and Cook

Now add the roasted jackfruit, salt to taste, and about one and a half cups of water. Mix everything well and close the lid of the pressure cooker. Cook for 2 whistles.

6. Open the Cooker Carefully
