Okra, also known as Bhindi, is a vegetable widely loved throughout India. It’s not only delicious but also incredibly beneficial for health. Ingredients (for 4 people)
- Okra (Bhindi) – 1 kilogram
- Mustard Seeds – 2 teaspoons
- Garlic – 1 clove
- Turmeric Powder – 1 teaspoon
- Red Chili Powder – 1 teaspoon
- Salt – to taste
- Panchpurna Masala – 1.5 teaspoons
- Tomatoes – 2 (finely chopped)
- Oil – as needed (Sesame oil is preferable for flavor)
Panchpurna Masala:
- Methi Seeds (Fenugreek Seeds)
- Fennel Seeds
- Black Cumin Seeds (Kalonji)
- Mustard
- Cumin Seeds
This masala adds a distinctive flavor to any vegetable and infuses it with a wonderful aroma.
Instructions
1. Okra Preparation
First, thoroughly wash the okra and ensure all the water is drained. Then, cut the okra into 1-1 inch pieces. Be careful not to make it soggy, as this can result in a sticky texture.
2. Starting the Tadka (Tempering)
Heat 2-3 teaspoons of oil in a pan. Add the Panchpurna masala and sauté it over low heat for a few seconds until it crackles.
3. Roasting the Okra
Now, add the chopped okra to the pan and sauté it over medium heat, stirring gently. Be mindful not to overcook the okra, as this will diminish its crispness. When the okra is slightly softened, remove it from the pan and set it aside in a bowl.
4. Mustard-Garlic Paste
In a blender, combine 2 teaspoons of mustard seeds and one whole garlic clove with a little water and blend into a paste. This paste is the secret ingredient that gives the spiced okra a rustic and spicy flavor.
5. Preparing the Spice Mix
Add a little more oil to the same pan and sauté the mustard-garlic paste. Then, add the chopped tomatoes, turmeric powder, red chili powder, and salt, and sauté well until the oil starts to float and the tomatoes are fully cooked.
6. Combining Okra with the Spice Mix
Now, add the previously roasted okra to the spice mix and gently stir to combine. Cook over low heat for 5-7 minutes, allowing the spices to fully meld with the okra.
7. Final Touch and Serving
When the okra is fully coated in the spice mixture and starts to release a little oil, turn off the heat. You can optionally sprinkle a pinch of dried fenugreek leaves (Kasuri Methi) or lemon juice on top.
