Rose Barfi: A Delicious and Beautiful Indian Sweet Recipe

In the world of Indian sweets, there's a wide variety of barfis available, but when the taste of a sweet combines with beauty, it creates a unique experience. One such special sweet, resembling a rose in appearance and incredibly delicious in taste, is 'Rose Barfi'. Ingredients for Making Rose Barfi

  • Milk Powder – 200 grams
  • Grated Coconut (Coconut Powder) – 100 grams
  • Sugar – 150 grams
  • Water – 1 glass
  • Edible Red or Pink Food Color – As required
  • Cardamom Powder – 1/2 teaspoon

Method for Making Rose Barfi

1. Making One-String Sugar Syrup

First, take a deep-bottomed pan and add 150 grams of sugar and one glass of water. Cook it on low heat until a one-string consistency is achieved. To check if the syrup is ready, take a little syrup between two fingers – if it forms a single string, the syrup is ready.

2. Adding Milk Powder and Coconut

Now, start adding the milk powder to the syrup gradually, stirring constantly to avoid lumps. Once the milk powder is well dissolved, add the grated coconut (coconut powder) and mix well.

3. Adding Cardamom

Now add cardamom powder to the mixture, which will give the sweet a pleasant aroma and flavor. Keep stirring the mixture constantly so it doesn't burn from the bottom.

4. Dividing the Mixture into Two Parts

When the mixture cools down a bit but is still warm enough to knead, divide it into two equal parts. Leave one part white and add edible red or pink food coloring to the other part.

5. Rolling Like a Roti

Using a rolling pin, roll both mixtures into roti-like shapes of a moderate thickness. First, roll out the white dough, and then place the pink dough on top of it.

6. Making Mathhi and Rolling

Now, cut small, round mathhi-like pieces from this two-layered roti – one large and one small. Then, place the small piece on top of the large piece and press gently. Arrange several such mathhis in a line and roll them up.

7. Giving the Rose Shape

Cut the rolled-up portion in half from the middle. Now, stand each part upright and gently bend the petals outwards. This will make it look exactly like a rose flower. Your beautiful and delicious 'Rose Barfi' is ready!

Some Special Tips

  • You can add a few drops of rose water to enhance both the flavor and the fragrance.
  • The sweet can be stored in an airtight container for 4-5 days during the winter season.
  • It is better to use natural food coloring, such as beetroot juice, for a healthier option.
