Dahi Ke Kebab: A Delicious and Healthy Indian Appetizer Recipe

In Indian cuisine, the use of yogurt is not limited to raita or lassi. Its delicious and healthy form as 'Dahi ke Kebab' (Yogurt Kebabs) wins everyone's heart. Especially during festivals, special occasions, or when hosting guests, this recipe can become the highlight of your dining table.

Why are Dahi ke Kebab Special?

Dahi ke Kebab are lighter and easier to digest compared to traditional kebabs. The combination of yogurt, paneer (Indian cheese), and green vegetables makes them rich in protein and calcium. Also, they can be shallow-fried instead of deep-fried, making them an excellent healthy snack option.

Essential Ingredients

For approximately 3 people:

  • 1 + 1/2 cups thick hung curd (or Greek yogurt)
  • 150 grams paneer (crumbled)
  • 2 tablespoons cashew nuts (finely chopped)
  • 2 tablespoons roasted gram flour (besan)
  • 4 slices of bread (to make breadcrumbs)
  • 2 green chilies (finely chopped)
  • 1 teaspoon ginger (finely chopped)
  • 2 tablespoons fresh coriander (finely chopped)
  • 1/4 teaspoon black pepper powder
  • 1/3 teaspoon cumin powder
  • 1/3 teaspoon chaat masala
  • 1/3 teaspoon garam masala
  • Oil for frying (as needed)
  • Salt to taste

Instructions

1. Prepare the Hung Curd

First, tie fresh yogurt in a muslin cloth and refrigerate it overnight so that the excess water is completely drained, and thick hung curd is ready.

2. Make the Mixture

In a deep bowl, add the hung curd, crumbled paneer, finely chopped green chilies, ginger, coriander, roasted gram flour, cashew nuts, and all the dry spices. Mix well.

3. Add Salt and Breadcrumbs

Add salt to taste and mix in breadcrumbs to make the mixture slightly firm so that the kebabs do not break while shaping.

4. Shape the Kebabs

Grease your hands lightly with oil and shape the mixture into equal-sized round or flat kebabs.

5. Coat the Kebabs

Coat each kebab thoroughly in breadcrumbs so that the outer layer becomes crispy when fried.

6. Set the Kebabs

Place the kebabs on a plate and refrigerate for about 30 minutes so that they set properly.

7. Fry and Serve

Heat oil in a pan, fry the kebabs on medium heat until golden brown on both sides, and serve hot with mint chutney.

  • If you want to make a low-fat version, you can also cook the kebabs in an air fryer.
  • You can also use cornflour for coating instead of breadcrumbs.
  • Adding raisins or almonds to the mixture can make it richer.
